Are you interested in exploring the diversity of the foods that you eat, how they are grown, processed and distributed and their impact on our health, environment and society?
Sustainability of Food Systems: A Global Life Cycle Perspective is a course designed to answer all of the above mentioned questions as well as other food related queries and concerns.
This free online course, offered by Professor Jason Hill of the University of Minnesota, will provide its participants with an overview of the global food system and its impacts on individuals as well as the entire world. It will enable you critically analyze how the global food system should change to adapt to the economic and environmental challenges of future.
This course has been based on fifteen basic questions spanning our world’s food system, impact of the food system on our daily lives and its future. The key points that will be discussed in this course include:
- What is food and where did it originate?
- What foods do we eat and where do they grow?
- How food items are processed and distributed?
- How do people choose what to eat and how do they prepare food?
- What is sustainability of global food system and how is it assessed?
- How does the food that people eat affect their own health as well as the environment?
- Is food enough for our current needs and how much food will we need in future?
- How can individuals contribute to a more sustainable food system and what challenges do we face in reforming this system?
At the end of the course you will not only be able to explore today’s global food system but will also be able to suggest modifications to improve its sustainability for our own benefit as well as for the benefit of future generations. After successfully completing the course you will get a Statement of Accomplishment signed by the instructor.
